Tuitunjian “Entre Valles”, Chile, 2015

£18.50

An intensely aromatic style with bright cherries and blackcurrants alongside notes of black pepper and vanilla. Elegant, complex and powerful on the palate. Well-integrated oak is complimented by rich dried berry fruits and earthy spice characters. A very long, complex finish.

The concept of “Entre Valles” is to create the ultimate high quality blend and expression of the land by selecting the best grape variety from each of Tutunjian’s vineyards.  The Cabernet Sauvignon comes from the Maipo Valley, the Carménère from Colchagua and the Syrah and Malbec both from Maule.

Description

Hand-harvested and put through a rigorous selection process, the grapes are macerated at low temperature prior to fermentation for 3-4 days to extract colour and aromas. Fermentation occurs in stainless steel tanks between 28-30°C before malolactic fermentation takes place in old French oak barrels. This creates better integration of oak and tannins. The wine remains in barrel for 12 months as part of the maturation process. Afterwards, the wine is blended in stainless steel tanks and aged for a further five months prior to bottling. Once bottled, the wine continues to age for 10 months before being released onto the market.
