Description

After harvest, the grapes are crushed, yeasted and softly bag-pressed in traditional style to avoid the extraction of bitter tannins. The wine is then transferred to 80% new and 20% one year old French oak for fermentation, followed by a further 24 months maturation prior to the final blending and bottling.
