This bone-dry Fino starts life as perennial favourite Tio Pepe (see below).  It then spends 6 months in old American oak barrels before being bottled unfined and unfiltered.  Beautiful nose with lots of freshly baked bread, almonds, apple skin, chamomile and sweet spice.  Delicate and fine on the palate with great intensity.  Brilliant food wine.

It was in 1835 when the young Manuel María González Ángel founded González Byass and started a long, and passion-filled journey, dedicated to the world of wine.

Manuel Maria found the support he needed to grow the business in his uncle, José Ángel, Tío Pepe (Uncle Joe). He showed his nephew everything he knew about Fino wines, so much so that his name was given to the winery’s founding solera, where today you can still see the name, “Solera del Tío Pepe”.

Inspired by the continual development in export and the growing success of his company, Manuel María González decided to join forces with Robert Blake Byass, his English agent, to whom he wrote a letter in 1844, recommending that Byass sell an “exceptionally pale…” wine. These were the very first barrels of Tío Pepe that were sent to the United Kingdom where they were very well received.

The alliance between the Byass and González families continued until 1988 when the Byass family withdrew from the business and the winery passed into the hands of the direct descendants of Manuel María González.

Today, it continues to be a family winery, presided over by the 5th generation of the González family who have always shown their passion for the world of wine, their love of nature and their care for the environment.

In 2016 Antonio Flores (pictured) was named “Best Winemaker of Fortified Wines in the World” according to the Winemaker of the Year awards, organised by the International Wine Challenge (IWC).

“Palmas” Explained:

The winemakers and winery managers have been marking the sherry casks with chalk to identify their content since 1880. They used to draw a single line on the fino casks, a circle on the oloroso wines…and there were also the ‘Palma’ markings. The Palmas wines are developed finos that are characterised by being exceptionally refined with a delicate aroma. The older and more refined the wine, the more ‘Palmas’ marked on the cask. Ever faithful to its passion for wine and in line with its innovative nature Gonzalez Byass launches every year the Fino Palmas Collection, a collection of gems comprising four very exclusive and limited production wines.

At the end of September 2016 top sommelier and wine personality Gérard Basset MW MS joined Master Blender Antonio Flores to taste over 100 casks and choose the very best for the 2016 edition of Finos Palmas. Una Palma is the evolution of Tio Pepe through time with 6 years of biological ageing giving a Sherry with breeding. This wine is selected from three casks in which the flor is still a life giving blanket. The solera is made of a total of 142 casks from which numbers 14, 24 and 103 were selected for the 2016 edition. This wine is hand bottled without filtration or clarification.
