Domaine de la Chauvinière

The vineyards of this leading Muscadet estate are ideally situated on granite-based soil overlooking the River Maine, and the vines are on average 45 years old. Enabling Jérémie Huchet, the young owner and winemaker, to create an intense, aromatic Muscadet. Clos les Montys is another domaine Jérémie owns, near the Goulaine marshland. It has a sandstone and clay terroir, creating a purer style of Muscadet that has considerable power.

Description

Six yeasts are collected from the best clusters in the vineyard, creating a definitive flavour and style that cannot be replicated. Fermentation lasts between 15 days to one month. As is characteristic of Muscadet-sur-lie, the lees settle at the bottom of the fermentation vessel, adding deep flavours and body. To gain further complexity, a small parcel of wine is vinified in oak barrels of varying capacities.
