Founded in 1925 by Paul Herard, this family-run Champagne house is now run by the third and fourth generations. Having passed down expertise alongside family history and heritage, this estate produces Champagne of the highest quality. Comprising of 10 hectares, of which seven are planted with Pinot Noir and three with Chardonnay, the family also source grapes from neighbouring vineyards to include Pinot Meunier in the blend when desired. The estate is situated in the Côte des Bar in the southern part of the Champagne region; the climate is varied with oceanic and continental influences. Defined by deep valleys and many rivers, the vines are planted on calcareous soil on the south-east facing slopes for optimum ripening potential.

Description

Produced by the traditional Champagne method where the wine undergoes secondary fermentation in bottle. 20-30% of reserve wine is added to the blend, creating consistency and their particular house style. One particular characteristic that makes Paul Herard’s distinct style is that the wine is put through malolactic fermentation to soften the acidity and create smoothness, body and weight. The wine spends a minimum of 15 months on its lees which provides the structure and definitive autolytic flavours.
